Flounder, basically. But the more Nordic salt water species.
These ones are all far more tropical then our wild ones up here on latitude 57.
Which ones did you taste and like?

Go for the sturgeon :)

Grow it for 20 years and feed your whole town.

I thought most flounder spend part of their life in salt water - are there any truly freshwater species of these?

Assuming flounder won't work I'd probably go with Tilapia or perch depending on how easy it is to maintain the right temperature for either of these.

The problem here in morocco is that we can t find reliable nursery, there s just a lot of goldfish and ornamental fishes

Pike-perch would eb a good choice i think. Reasonably fast growth at warm temps, optimum temp is 28ºC I believe, but also survives all the way down to pretty much freezing point.

Flounder are euryhaline ie have the ability to live indefiniely in a range of salinities, from sea to fresh. However, in the interest of their health, growth and flavour it would probably be a good idea to have them in brackish water... Perhaps you could run paralel tanks, have a brackish tank running RAS with the effluent going to a seperate hydroponics loop

Grow what you can get as fingerling in the area. No sense in dreaming of species if you can't get them.
