Tried the portuguese style a couple of weeks ago and it was very good yes. That one of yours looks great. Never thought of putting olives in there as well :headbang:

A 50/50 mix of water and lemonade to steam yabbie basically taints the flesh with a slight sweet flavour in the cooking process.

Then peel tails and put in a large bowl

Throw in a good shake of pepper and salt (which compliments the sweet)

Cover with glad wrap and chill in the fridge.

Either make some garlic bread or put some in the oven at this stage.....

Whilst chilling tails and cooking bread - shred up some crisp cos lettuce, sliced capcicum, thinly sliced shalots and fresh pitted olives.

Toss salad through tails with a drizzle of extra virgin olive oil, cut big chunks of garlic bread and throw a big handful of yabbie salad onto each piece, garnish with basil.

Its my take on some form of brusheta.....yabbie style

Ive got a heap of yabbie recipes bear and sorry to torment you at such an early hour :lol:

Someone mentioned to me a while back why dont I write up a cookbook for yabbie/marron recipes..... lets just say this might be in the process :thumbright:

Will be trying some more recipes this summer bear (now that the yabbies are back on the bite) and hopefully it will be done for the new year.

The other thing holding me back is I need a better camera. Hopefully Santa Claus will come through :thumbleft:

Otherwise its pretty much done.
