Came across this one today...

Fiery Fish Tacos with Crunchy Corn Salsa

Prep Time: 30 Minutes
Cook Time: 10 Minutes
Ready In: 40 Minutes
Yields: 6 servings
INGREDIENTS
1 cup corn
1/2 cup diced red onion
1 cup peeled, chopped jicama
1/2 cup diced red bell pepper
1 cup fresh cilantro leaves, finely chopped
1 lime, zested and juiced
2 tablespoons sour cream
2 tablespoons cayenne pepper
1 tablespoon ground black pepper
2 tablespoons salt
6 (4 ounce) fillets tilapia
2 tablespoons olive oil
12 corn tortillas, warmed

DIRECTIONS
Preheat grill for high heat.
In a medium bowl, mix together corn, red onion, jicama, red bell pepper, and cilantro. Stir in lime juice and zest.
In a small bowl, combine cayenne pepper, ground black pepper, and salt. Brush each fillet with olive oil, and sprinkle with spices.
Arrange fillets on grill grate, and cook for 3 minutes per side. For each fiery fish taco, top two corn tortillas with fish, sour cream, and corn salsa.

Doing well thanks Les, little bloke is growing like a mushroom. Good point about substituting barra - can anyone who's tasted both give a comparison of taste/texture?

Here's one way we cajuns eat crawfish:

Crawfish Etouffe (A-too-fay)

I don't have the exact amounts, but you can probably figure it out pretty easily:

In a medium size pot melt one stick of butter or margarine, add chopped onions, celery and bellpepper. Sautee until onions become clear.

Add one can of golden cream of mushroom soup or regular cream of mushroom soup, and one can of Rotel tomatoes (Rotel tomatoes are chopped tomatoes cooked with jalepenos so they have a little kick.

Add crawfish tails (can also use shrimp), cover, reduce heat to low and cook 20 minutes. Serve over rice (and, it's even better if you add a little butter to the rice as it cooks).

And here's my personal creation, but I don't have a name for it.

If you like fried fish but want to cut down on the fat, try this.

Lay fillets out in a pan and coat with a little margarine or butter, few drops of lemon juice and season.

Crumble up a bowl of Ritz crackers (especially buttery Ritz) and generously coat the tops of fillets with the crackers.

Bake/Broil/Barbie as usual! It gives you that crunchy coating like fried, but without all the grease.

I like it edjco....

My mum did oven baked chicken pieces in a similar way, using a savoury cracker like ritz, and just a little butter coating the pieces.. It came out like deep fried crispy chicken, super tasty..... :)

Hey Edjco:

I made a point to try the etoufee on Saturday and it is indeed good, I gar-on-tee! I had leftovers for lunch on Sunday and polished the rest off for dinner last night. I used teeny shelled shrimp, but next time I'll take the time to use the big shrimp and shell them myself. The crawfish at the store were pre-seasoned so I went with shrimp. Since the missus doesn't like it anyway I will probably try it with crawfish next time!!! Thanks!!!
