Chuck's Fish Rice...since Ritz cracker crumbs were already mentioned...

Here's what I do when not wanting to go to alot of time and trouble.

Put fillets of bass or perch (no catfish) in a microwave dish. More fish than rice is better! Cover with two cups Uncle Ben's instant rice & two cups hot water. Add 1/4 stick margarine and a few dashes soy sauce. Microwave covered for 10-15 minutes. Stir with fork to break up fillets and let sit for another 5 minutes if all the water isn't soaked up. Good with crawfish tails also. Catfish gets mushy in the microwave.

Spent a lot of time surfing in Tahiti, back in the day. Oz, the recipe sounds spot on except for the keeping overnight bit. It can start to ferment with that much time so best to eat asap. Great using tuna as well, go easy on the vinegar, and don't forget to salt just before eating.

I was wondering if it would be possible to have a Fish prep topic within which we could have individual recipe threads and threads in which to instructions/link about fish prep like how to clean and fillet different types of fish?

Fish My Way (for dull flavoured fish)

In a rectangular casserole dish finely slice, 1/2 onion, half a stick of celery, slice with a peeler half a carrot. Place 2 fish fillets (facing in opposite directions) over the top. Repeat with the onion carrot and celery. Add soft vegetables over this eg leafy veg mushrooms. On top of this sprinkle.
1 Tablespoon Coles French onion soup (trust me on this)
1 Teaspoon fennel seeds
1/4 teaspoon cummin
1 teaspoon mixed herbs (usually use Italian)
Pour on a reasonable amount of sunflower oil.
A sprinkling of fish sauce and sesame oil and lime juice.
Dribble approx 2 tablespoons sweet chilli sauce over the top dot with butter and cover with foil.
Bake in a medium oven for approx 25 mins or until fish is cooked.
Serve over Jasmine rice.

Called fish my way because its never the same twice as I keep forgetting at least one of the ingredients every time :) :drunken:

Bugger
Can't even get it right writing it down :( . Replace the mixed Italian herbs with 1/2 teaspoon of chinese five spice (the nice one with orange peel, star anise, cassia bark, cummin and pepper) and crushed garlic (to taste).
