Get a really good 6" or 7" fillet knife and keep it sharp. Don't use it on anything but fish.

The bones of fish come out real easy when cooked tastes better too
Eat one side down to spine
pull out head tail ribs and spine usually in one piece
Eat the other half

Good point. I don't have a problem eating fish with bones. I grew up in Alaska eating small trout (Dolly Varden) that I would catch in the small creek my my house. You couldn't fillet them. My wife and daughter however will stop eating the fish if they find one bone. So, I have to be very good at filleting too.
