Gday all. Thought i would share a fantastic pickled beetroot recipe i found. Here is the original


4 Large Beetroot
3/4 Cup Water
1 1/2 Cups White Vinegar
3/4 Cup Sugar
1/2 Teaspoon Peppercorns
1 Bay Leaf
2 Cloves
1/2 Teaspoon Mustard Seeds
1/2 Cinnamon Stick
1/4 Teaspoon Salt


Wash beetroot thoroughly and boil in water until tender.
Cool and remove skin. (Either by hand or with a knife.)
Cut beetroot into slices or julienne strips.
Place all other ingredients into a saucepan and bring to the boil.
Simmer for five minutes and then strain.
Pack beetroot into hot sterilized jars and top up with vinegar mixture.
Seal and store in a cool place.

I made this up with one of my gargantuan beetroot that i harvest about 6 weeks ago. Tastes fantastic and even got a non-beetroot eater to chow it down.

Add one birds eye chille per jar and it is perfect, cheers

Made three jars last weekend.

Here's the larger of the beet roots used. 1.6kg

Did some pickled cucumber a few days ago.

Made a batch yesterday using the recipe out of the latest Organic Gardener mag. It included two red onions and a kilo of granny smith apples and used apple cider vinegar. Was delicious with the zucchini fritters out of the same mag.
