yes the japanese have been known to enjoy many raw seafood specimens. One of my biggest surprises was when my partner was horrified at the waste of the "crab sauce" or crab guts/shite when she first had her first meal of aussie blue manners.

The coral? is that what they call it? must say it doesn't look to appetising but is the most "crab tasting" part of a crab!

yep it's like crab concentrate..I now call it crab mustard, I think the Japanese call it 'kani miso' or 'crab miso'? In japan you can buy it in a can and they put it on rice, a bit pricey i think.

yep kane miso or crab shit as I call it. They have it on sushi in Japan but you won't find it on aussie sushi.
There's also "uni" or sea urchin guts and "sazae" which is some kind of large whelk which I tried raw...

another interesting one I tried was "basashi" - raw horse meat yum yum

Hmmmm raw horse meat.... I'm sure there is a reason we don't eat horse cooked let alone raw!

Mortadella (spelling) was origionaly made with horse meat...there is nothing wrong with it, the same as cat or dog, its just frowned upon because of the pet factor I'd guess. :dontknow:

Thw french eat horse, I think they cook it but. Have tried dog unintentionally, dipped in dog brain for that matter. I still shudder at the thought of eating baby rabits as mentioned in other recent threads. As I said before it's a matter of taste and availability, and I guess how hungry you are :think:

and of course how dedicated you are to growing your own food and what that means to you. Hopefully next year this thread can be revived with some real stories of salmon catches

VERY TRUE .. trick to fish is... as soon as you get em on board.. slit thier gills and leave em in a bucket to bleed out... once they sit for like 15 20 min gut then pack insides with ice and ice all around.. remove the bloodline down the back .. the more blood you can get outa the fish the less fishy taste they have... and the meat stays firmer.. if storing for more than 1 day on ice remove gills entirely ... they contain a lot of toxins

This was one of the smaller ones, I landed three of them over about an hour or so a couple of days ago..

I'd been going fishing every day, sometimes twice a day for the last 3 weeks waiting for them to come in, finally they are here, right on easter time.

Last night I made fish patties from a fillet and they are beautiful, found the recipe on a fishing forum and I adjusted it a bit to suit..

Take one salmon fillet, remove skin and red meat, cut into large chunks, boil for 5 minutes in stock, remove fish and let cool.

Chop up 2 medium potatoes, boil in the same water till just going a bit soft, drain and mash them dry, flake up the fish and add to the potatoes.

Now saute 1 finely chopped onion, a couple of spring onions and 5 or 6 finely chopped green beans.

When they are about done add a teaspoon of mustard, and about 1/4 cup of finely chopped dill and parsley, now mix this into the potato fish mix adding an egg or two to help bind it all together. season with salt and pepper to taste.

Let the mix cool for an hour or two or over night to firm up. Start making patties, about 2 cm thick. coat in flour, dip in beaten egg, then into bread crumbs.

It's all a bit long and messy, but now you can throw most into the freezer for use as needed. I ended up with a dozen good sized patties which is 6 good meals for me.. Shallow fry till golden brown..

They don't look half as good the next morning, but still taste great cold..

I'm off to catch some more... This time I'm going to try using salmon to make Thai fish cakes.
