I rendered some of the fat down, set it in the fridge and spread it on some cruskits in place of butter.
I rather liked the taste, a hint of light fish and a slightly nutty flavour.
Mind you I love chicken or pork dripping on toast with a touch of salt and pepper.

I would love to get an analysis of the fat say % omega 3 to omega 6.

Sounds like they might smoke well - do they have tough skin like silvers?

My jades will be going out into the greenhouse system in a couple of weeks. We love the taste of them and reckon they are similar in taste to redfin

I really want to try Jade Perch, to eat and in the AP system. It's a pity they don't tolerate colder temps though, no doubt they'd all give up on me when my water temp hit 9-10 degrees as it did this winter. :(

caught and cooked 9 fish the other night for a dinner with friends so they could have a taste.
They all without reservation said they loved it.
The fish ranged in size from 500 to 900 grams (I did write down all the individual weights but cant find it now)
The prepared weight minus heads, fins, guts, scales was just a smidgen over 2 kg plus 490 grams of fish oil.
menu- Potato and watercress soup, Shallow fried jades, tomato oregano and chive salad, snow peas, flat beans, roasted small potatoes
The only part of the menu that didnt come from the garden or grow beds was the dessert because my bananas weren't yet ripe so we had blueberry crumble.
All the waste goes into a rotary composter for the garden.

I found the list of weights as follows.
608, 644, 646, 784, 804, 812, 816, 870, 906. grams each.
If I discount the weight of the recovered oil then its a 70% wastage factor.
Probably closer to 75% if I was to fillet and skin them as well.

I to like the taste of Jade perch, I have picked them up from pet or aquarium shops under the name Barcoo Grunter, if you can find them early in the growing season I found they grow much faster than silvers and are at plate size from 50-60mm in one growing season.
