Happy Thanksgiving!!

I just made up a huge bowl of cranberry relish. The girls can't get enough of the stuff. We're keeping things simple this year--just the four of us. Dinner will be a turkey breast, two kinds of stuffing (Husband wants to try oyster stuffing; I think its a waste of good bread cubes.), salad, cranberry relish, and a sweet potato pie.

This time last year, I was struggling to make a looped autosiphon. :lol:

Happy Thanksgiving everybody!

We're having four pumpkin pies, two apple pies, a pecan pie, 12 lb turkey, dressing, sweet potato casserole (it's like pureed with pecans and brown sugar on top), corn casserole, and rolls. Just took the apple pies out of te oven and just now put the turkey in a bag and into the oven. Mmmm

I just finished some great sweet potatoe pie, corn cassarole, turkey and dressing!! I'm trying to figure out how to make room for desert. I know there is homemade pumpkin cheesecake, cranberry bread pudding w/ice cream and bourbon pecan pie.

I've been doing the weight watcher thing since July but I think I'll have to lie about my points today!!

Besides all that, many of our family and best friends are here... It doesn't get much better.

Janet if you need a really good recipe for corn cassarole let me know.

Our corn casserole is like one can of creamed corn one can of regular corn, a box of Jiffy corn muffin mix and like some milk or something. It's OK, but we have a recipe for a kind of scalloped corn casserole from my MIL's friend that I think we should do instead.

BTW, dinner wiped me out and I'm just now getting some pie after a two hour nap.

The cranberry bread pudding sounds good to me Jazz, my wife likes the canned jello crap.

Ok. Here's the bread pudding and corn casserole recipes. My wife corrected me that it's not called cranberry bread pudding. My mistake. It's called pumpkin bread pudding but it does have cranberries in it and it IS to die for!!

Corn Casserole:
1 can creamed corn
1 can corn drained
1 pkg. Corn muffin mix (jiffy is fine)
1 Cup sour cream
3 lg eggs beaten
1/2 stick melted butter
1 cup grated cheddar cheese

Mix all ingredients except cheese and place in a greased casserole dish. Bake 45 minutes at 350. Put the cheese on top and bake another 10-15 minutes.

Pumpkin bread pudding(w/cranberries):
8 cups cubed white bread
1 cup dried cranberries
1 cup granulated sugar
2 cups canned pumpkin
2 cups heave cream
1/2 cup whole milk
5 whole eggs
1 tsp. Vanilla extract
2 tbl. Dark Rum
pinch on salt
3/4 tsp. Nutmeg
1/2 tsp. Cinnamon
1/8 tsp. Ground clove

Place cubed bread in a 11" x 9" pan and sprinkle with dried cranberries.
Mix together remaining ingredients and pour over bread.
Allow mixture to set, covered in refrigerator overnight.
Bake in a water bath at 350 degrees F. for 45-60 minutes(until it's dark on top).
